Mango Lassi Overnight Oats with Candied Almonds

This recipe should be made he night before. It feels like a bit of a chore in the evening as you’ve settled in, clearing the kitchen after Iftar, but you’ll thanking me in the morning when you’ve overslept and forgot to make Sehri!

MANGO SMOOTHIE BOWL

INGREDIENTS

1/2 cup low fat natural yoghurt

1/4 cup milk

1/4 cup mango pulp

1/4 tsp turmeric powder

1/2 cup whole rolled oats

Sprinkle of brown sugar

Handful of almonds and pistachios

Sliced fresh fruit (I chose pomegranate, cherries and mango)

METHOD

  1. Heat a dry frying pan over a medium heat. Sprinkle in the almonds, pistachios and brown sugar. Give the frying pan a little shake so the slightly melted sugar clings to the almonds.

  2. Once the almonds are slightly toasted turn off the heat and put aside.

  3. Mix the yoghurt, milk, turmeric and mango pulp in a bowl, you gotta mango lassi there!

  4. Pour over oats and give a gently stir into the mango lassi.

  5. Cover the bowl and refrigerate overnight.

  6. In the morning, the oats would have absorbed the lassi and softened. Sprinkle over your toasted candied nuts and sliced fruit.
