Desi omelette cheese sandwich
Spiced onion & tomato omelette sandwich
INGREDIENTS
1/4 cup diced red onion
1/4 cup diced tomato
2 tbs salted butter
salt and pepper for seasoning
1/4 tsp dry crushed red chilli powder (Allepo chilli powder is perfect, it’s nice and mild with a hint of sweetness)
handful of roughly chopped fresh coriander
2 eggs
handful of grated cheese (American sliced cheese if you’re classy!)
2 slices of thick white bread (the squarer the bread, the better!)
METHOD
Melt half the butter in a frying pan. When it starts to sizzle, add the diced onion and tomato.
Meanwhile break the eggs in a bowl and gently whip them. You are not looking to aerate the eggs with the whipping but to break the yolks and evenly mix them with the egg whites.
Back to the frying pan, sprinkle over the seasoning and chilli powder. Evenly spread the masala on the base of the pan. Pour over the egg.
Let the egg set for 5 seconds and then with a wooden spoon, draw two opposite sides of the set egg in to the middle. this will allow the raw egg to spill to the bottom and form the base.
Let the omelette cook for another minute and sprinkle the coriander over the egg.
Place both the slices of bread over the omelette and press them in.
Gently slide a spatula under the cooked omelette and flip it over. Now the bread is facing the frying pan.
Add the second knob of butter around the bread. Sprinkle the cheese over the cooked egg.
Slide the spatula under one slice of bread and flip it over to form a sandwich. Flip again.
Slice onto a plate. You can cut it in half! YUM!
