Back when Chicken Tikka Masala was declared the national dish of Britain, I was thinking, ‘oy what about Curry Fries?!’
A thick spicy sauce dolloped over crispy potato fries, this is magic!
I have always been averse to the word curry in describing desi cooking. I understand it has origins in dishes from certain parts of South Asia, however, the use of the word limits the cuisine. The umbrella term almost dilutes the nuances of food migrating from such a large area of the world.
Curry Fries are the exception to this rule. Much like Bun Kabab, curry fries are a symbol of South Asian global migration and the consequent evolution of food (see Currywurst and Katsu Curry).
